Ingredients

  • 125 g butter
  • 1/4 cup almond meal
  • 1/4 cup rice flour
  • 1/4 cup self-raising flour
  • 1/2 cup plain flour
  • 1/4 cup raw caster sugar
  • 250 g fresh strawberries halved
  • 1/4 cup strawberry jam

Method

  • Step 1
    Preheat oven to 140C.
  • Step 2
    Beat butter and sugar until well combined.
  • Step 3
    Gradually add the flours and almond meal in ¼ cup batches one at a time until just combined.
  • Step 4
    Knead dough.
  • Step 5
    Roll dough onto a quiche size dish.
  • Step 6
    Prick with fork.
  • Step 7
    Bake for approximately 40 minutes, check when browned.
  • Step 8
    Rest for 10 minutes.
  • Step 9
    Arrange strawberry halves on top of shortbread after 10 minute cooling period
  • Step 10
    Boil strawberry jam until bubbles appear, baste on top of strawberry shortbread.
Recipe Notes
Serve with ice-cream or double cream. I use a round quiche size dish. And I prefer low GI raw caster sugar.
