Almond meal shortbread topped with strawberries and strawberry jam.
Ingredients
- 125 g butter
- 1/4 cup almond meal
- 1/4 cup rice flour
- 1/4 cup self-raising flour
- 1/2 cup plain flour
- 1/4 cup raw caster sugar
- 250 g fresh strawberries halved
- 1/4 cup strawberry jam
Method

Step 1Preheat oven to 140C.

Step 2Beat butter and sugar until well combined.

Step 3Gradually add the flours and almond meal in ¼ cup batches one at a time until just combined.

Step 4Knead dough.

Step 5Roll dough onto a quiche size dish.

Step 6Prick with fork.

Step 7Bake for approximately 40 minutes, check when browned.

Step 8Rest for 10 minutes.

Step 9Arrange strawberry halves on top of shortbread after 10 minute cooling period

Step 10Boil strawberry jam until bubbles appear, baste on top of strawberry shortbread.
Recipe Notes
Serve with ice-cream or double cream.
I use a round quiche size dish.
And I prefer low GI raw caster sugar.
