Ingredients

  • 2 cup white sugar
  • 1/2 cup evaporated milk
  • 1/2 cup water
  • 60 g butter
  • 1/2 tsp vanilla essence

Method

  • Step 1
    Place evaporated milk, sugar, butter and water in a heavy saucepan. Stir over moderate heat until butter has melted and the sugar dissolved.
  • Step 2
    Push down any crystal bits on the side of the pan using a brush dipped in warm water.
  • Step 3
    Insert a candy thermometer and bring to boil. Stir often until it reaches a soft ball stage (112-115C).
  • Step 4
    Remove pan from heat, add the vanilla essence and beat rapidly until smooth and creamy.
  • Step 5
    Pour into a greased 20 cm square tin and refrigerate. Check after an hour and mark into squares when almost set.
  • Step 6
    Store in the fridge.
