Great basic recipe to which you can add whatever you fancy to make it different - chopped nuts, glace cherries, coconut or dried fruit.
Ingredients
- 2 cup white sugar
- 1/2 cup evaporated milk
- 1/2 cup water
- 60 g butter
- 1/2 tsp vanilla essence
Method

Step 1Place evaporated milk, sugar, butter and water in a heavy saucepan. Stir over moderate heat until butter has melted and the sugar dissolved.

Step 2Push down any crystal bits on the side of the pan using a brush dipped in warm water.

Step 3Insert a candy thermometer and bring to boil. Stir often until it reaches a soft ball stage (112-115C).

Step 4Remove pan from heat, add the vanilla essence and beat rapidly until smooth and creamy.

Step 5Pour into a greased 20 cm square tin and refrigerate. Check after an hour and mark into squares when almost set.

Step 6Store in the fridge.
