Vegetable Burgers with Sweet Chilli Mayo

Ingredients

  • 400 g canned chickpeas
  • 1/2 sweet potato
  • 1/2 zucchini
  • 1/2 onion
  • 1 carrot
  • 1 tsp curry powder
  • 2 vegetable stock cube
  • 1 egg
  • 3/4 cup fresh breadcrumbs
  • 3 tbs sweet chilli sauce
  • 4 tbs mayonnaise

Method

  • Step 1
    Roughly chop chickpeas, grate sweet potato, zucchini, carrot and onion.
  • Step 2
    Add curry powder, stock cubes, egg and breadcrumbs and mix well.
  • Step 3
    Let stand for 10 minutes. If mix is too moist, gently squeeze out excess moisture.
  • Step 4
    Divide into patties and fry on low heat or until browned and cooked through.
  • Step 5
    Mix sweet chilli sauce and mayonnaise together and drizzle over cooked burgers.
Recipe Notes
Very nice on a toasted bun with a salad and side serve of chips.
