Very nice vegetarian burger.
Ingredients
- 400 g canned chickpeas
- 1/2 sweet potato
- 1/2 zucchini
- 1/2 onion
- 1 carrot
- 1 tsp curry powder
- 2 vegetable stock cube
- 1 egg
- 3/4 cup fresh breadcrumbs
- 3 tbs sweet chilli sauce
- 4 tbs mayonnaise
Method

Step 1Roughly chop chickpeas, grate sweet potato, zucchini, carrot and onion.

Step 2Add curry powder, stock cubes, egg and breadcrumbs and mix well.

Step 3Let stand for 10 minutes. If mix is too moist, gently squeeze out excess moisture.

Step 4Divide into patties and fry on low heat or until browned and cooked through.

Step 5Mix sweet chilli sauce and mayonnaise together and drizzle over cooked burgers.
Recipe Notes
Very nice on a toasted bun with a salad and side serve of chips.
