An utterly delicious vegetarian nachos dip.
Ingredients
- 30 g butter
- 2 onion finely chopped
- 2 tomato chopped
- 2 garlic clove crushed
- 1/2 tsp chilli powder
- 1 tsp paprika
- 1/2 tsp ground cumin
- 1/2 cup water
- 400 g refried beans
- 2 tbs tomato paste
Method

Step 1Melt butter in frying pan and add onions, garlic, chilli, paprika and cumin. Cook for 2 to 3 minutes.

Step 2In a saucepan, mix together tomatoes, refried beans, tomato paste and water until it has a soft but not runny consistency. Cook for 5 minutes.

Step 3Combine onion and bean mixture and mix well.

Step 4Place mixture in a large bowl with 2-3 mashed avocados and sour cream. Serve with corn chips.

Recipe Notes
If we're having it for dinner, I do a baking tray of corn chips covered with cheese and melted in the oven them spoon over the nachos mixture along with avocado and sour cream. Crush or very finely chop garlic cloves.
