A delicious pie the whole family will enjoy.
Ingredients
- 400 g canned tuna in oil drained flaked
- 300 g canned corn drained
- 70 g unsalted butter
- 2 tbs fresh flat-leaf parsley finely chopped
- 60 ml milk
- 6 potato peeled roughly chopped
- 1/2 cup frozen peas
- 4 tbs tasty cheese grated
- 2 celery stick chopped
- 1 carrot diced large peeled
- 1 leek thinly sliced
- 1 tbs plain flour
- 300 ml thickened cream
Method

Step 1Boil and mash potatoes with the milk and 50 g butter.

Step 2Add salt and pepper to taste. Set aside and keep warm.

Step 3Melt 20 g butter in a nonstick fry pan over medium heat. Add the leek, carrot, and celery.

Step 4Cook for 3-4 minutes or until softened.

Step 5Add flour, cook, stirring constantly for another minutes.

Step 6Stir in cream and bring to simmer. Reduce heat and cook for 5 minutes or until thickened.

Step 7Add tuna, corn, peas, 2 tablespoons cheese, parsley, salt and peper to taste. Cook for another 5 minutes.

Step 8Preheat grill on high, transfer tuna mixture to a 6 cup capacity ovenproof dish.

Step 9Top with the mashed potatoes and sprinkle with remaining cheese. Place under grill for 2 minutes or until golden brown on top.
