Ingredients

  • 4 flour tortillas
  • 1 carrot finely grated small
  • 125 g canned corn drained
  • 95 g canned tuna drained
  • 1/2 red capsicum finely chopped small
  • 2 spring onion thinly sliced
  • 1 cup cheese grated
  • 1 tbs mayonnaise
  • 1 tbs olive oil

Method

  • Step 1
    Add vegetables, tuna and mayonnaise in a bowl and mix to combine. Adjust mayonnaise quantity if required.
  • Step 2
    Place some tuna mixture on one tortilla, enough to cover, then top with grated cheese.
  • Step 3
    Top with another tortilla. Pan fry in some olive oil for 2-3 minutes per side or until browned.
  • Step 4
    Cut into triangles or strips.
  • Step 5
    Serve with sour cream and / or guacamole, if desired.
Recipe Notes
The amounts of ingredients I've added fills 2 tortillas, but you can increase or decrease amounts as needed. You can substitute tuna for cooked shredded chicken or any leftover meat. Substitute other vegetables of choice.
