Ingredients

  • 425 g canned tuna in brine
  • 1 leek thinly sliced
  • 1 carrot diced large
  • 2 celery stick chopped
  • 1 zucchini chopped medium
  • 400 g canned crushed tomatoes
  • 2 tbs tomato paste
  • 2 tsp chilli powder optional
  • 1 tsp dried oregano
  • 2 garlic clove minced
  • 1/4 cup white wine
  • 1 cup tasty cheese optional *to serve

Method

  • Step 1
    Fry leek in a large frypan until soft. Add chilli powder and garlic.
  • Step 2
    Add chopped celery, carrot and zucchini with about ¼ of the tomatoes and cook until soft.
  • Step 3
    Add oregano, remaining tomato and wine, simmer 5 to 10 minutes to reduce some of the liquid. Add tomato paste and tuna.
  • Step 4
    Pour tuna mix into a large oven-proof dish and cover with mashed potato and grated cheese.
  • Step 5
    Bake at 180C for 30-45 minutes or until heated through. Grill to brown cheese if desired.
Recipe Notes
Tuna can be replaced with chopped cooked chicken or turkey. Serve with mashed potato, cooked rice or pasta and tasty or feta cheese. To make pasta bake, add tuna mix to cooked spiral pasta and mix to combine. Pour into baking dish and sprinkle top with 100 grams crumbled Feta cheese. Bake at 180C for 40 minutes.
