A great side dish or entree.
Ingredients
- 4 cup plain flour
- 2 tsp salt
- 1/3 cup butter
- 1 cup water warmed
- 4 tbs oil hot
- 1 cup cheese grated
Chorizo filling
- 1 garlic clove crushed
- 500 g pork mince
- 1 tsp salt
- 2 tsp white vinegar
- 2 tsp brandy
- 1 tsp chilli powder
Sauce
- 2 onion small
- 1 garlic clove crushed
- 3 tbs oil
- 2 tsp plain flour
- 1/4 tsp oregano
- 1 tsp salt
- 1 cup tomato puree
- 1 tbs water
Method

Step 1Tortillas: Mix flour and salt in a bowl. Add butter and mix through.

Step 2Stir in enough water to make a firm dough.

Step 3Knead lightly on floured board until dough is smooth. Shape portions into egg sized balls, cover and let stand for 20 minutes.

Step 4Roll each piece into thin circles 18-20 cm in diameter.

Step 5Fry ungreased in a hot pan until lightly brown, about 2 minutes one side and 1 minute the other side.

Step 6Chorizo filling: Mix all ingredients well. Fry over medium heat until well browned, stirring frequently.

Step 7Sauce: Heat oil in pan, stir in onions and garlic. Cook until golden.

Step 8Mix remaining ingredients to smooth paste and cook over low heat for 10 minutes, adding just enough water to make a thick sauce.

Step 9To serve: Dip tortilla into hot oil, then chilli sauce.

Step 10Spoon chorizo sauce on each tortilla, cover with chilli sauce and top with a sprinkle of grated cheese.

Step 11Roll up and arrange in a baking dish.

Step 12Spoon a little more chilli sauce over the top and sprinkle with additional grated cheese.

Step 13Bake in a moderate oven for 15 minutes or until cheese has melted.
