This is my Mum's recipe. As kids we were so excited when she made these. Toffee apples are still a favourite of mine.
Ingredients
- 12 apples small
- 4 cups sugar
- 1 tsp white vinegar
- 1 cup water
- 1/3 cup liquid glucose
- 1 tsp red food colouring
Method
-
Step 1Line an oven tray with greased baking paper.
-
Step 2Stick wooden skewers into apples at stalk end about halfway through. Take care they go in straight.
-
Step 3Rinse apples under cold running water and stand on wire rack to dry. Do not wipe apples dry, they must be completely dry before coating.
-
Step 4Put sugar, white vinegar, water and liquid glucose into a large saucepan and stir over a low heat until sugar dissolves.
-
Step 5Bring to the boil and boil without stirring until it turns a pale honey colour. Toffee will make a cracking sound when ½ teaspoon is tested in cold water.
-
Step 6Remove from heat and allow bubbles to subside.
-
Step 7Stir in the food colouring.
-
Step 8Tilt saucepan to one side and swirl apples in toffee, taking care to coat completely.
-
Step 9Remove apples from the toffee and twirl in a jug of cold water to set toffee. Place onto prepared tray.
