Ingredients

  • 3 banana
  • 200 g salad leaves
  • 1 Lebanese cucumber sliced
  • 1 cup snow pea sprouts optional
  • 1/4 cup mint chopped
  • 1/4 cup coriander chopped
  • 1/4 cup peanuts chopped roasted
  • 1/4 cup coriander *to decorate
  • 1 red chilli chopped optional

Dressing

  • 2 green chilli sliced
  • 1 tsp ginger grated
  • 1 tbs fish sauce
  • 2 tbs lime juice
  • 1 tbs brown sugar
  • 1/4 cup coconut milk

Method

  • Step 1
    Combine salad leaves with cucumber, snow pea sprouts, mint and coriander. Cover with cling film and refrigerate until ready to serve.
  • Step 2
    Meanwhile, combine all dressing ingredients in a bowl and whisk until thoroughly combined.
  • Step 3
    Just before serving, slice bananas and add to salad. Pour dressing over and toss well, then sprinkle over peanuts, extra coriander and chopped chilli, if desired.
