Ingredients

  • 190 g plain flour
  • 60 g butter cold
  • 1 pinch salt
  • 1 cup cold water

Quiche

  • 1 onion diced small
  • 2 bacon rashers finely chopped
  • 1 cup tasty cheese grated
  • 1/4 tsp salt
  • 1 pinch pepper *to taste
  • 1 1/4 tsp hot English mustard
  • 2 tbs red capsicum diced
  • 1 1/2 tomato medium sliced
  • 4 egg
  • 400 ml milk
  • 2 tsp self-raising flour

Method

  • Step 1
    Pastry: Put butter, salt and flour in a food processor. Mix on high until mixture looks like breadcrumbs.
  • Step 2
    Mix again on slow, adding enough cold water to make into a dough.
  • Step 3
    Remove from food processor and knead lightly on a floured surface.
  • Step 4
    Roll the pastry out into a circle 4 mm thick. Line the quiche plate with the pastry. Trim edges.
  • Step 5
    Quiche: Preheat oven to 180C.
  • Step 6
    Sprinkle onion, tasty cheese, bacon and capsicum over the pastry base.
  • Step 7
    Beat eggs together with hot English mustard in a bowl.
  • Step 8
    Mix self-raising flour with 50 mL of milk until smooth and add to egg mixture.
  • Step 9
    Add remaining 350 mL of milk and beat again. Pour egg mixture into quiche plate.
  • Step 10
    Place sliced tomatoes on top and bake for 1 hour.

Recipe Notes
The pastry is almost the best part. Very tasty served with a green salad and a hot potato salad.
