A very tasty soup.
Ingredients
- 1 tsp vegetable oil
- 2 tsp red Thai curry paste
- 400 ml coconut milk
- 2 cup chicken stock (liquid)
- 1 tsp fish sauce
- 400 g sweet potato diced
- 225 g bamboo shoots drained rinsed
- 1 cup bean shoots
- 1 cup coriander
- 2 cup rice vermicelli noodles
Method

Step 1In a deep saucepan add oil, red curry paste and sweet potato on medium heat for 5 minutes.

Step 2Add remaining ingredients and let simmer for 30 minutes.

Recipe Notes
I used Carnation evaporated milk with coconut flavour as it is less fattening.
