Ingredients

  • 1 tsp vegetable oil
  • 2 tsp red Thai curry paste
  • 400 ml coconut milk
  • 2 cup chicken stock (liquid)
  • 1 tsp fish sauce
  • 400 g sweet potato diced
  • 225 g bamboo shoots drained rinsed
  • 1 cup bean shoots
  • 1 cup coriander
  • 2 cup rice vermicelli noodles

Method

  • Step 1
    In a deep saucepan add oil, red curry paste and sweet potato on medium heat for 5 minutes.
  • Step 2
    Add remaining ingredients and let simmer for 30 minutes.

Equipment

  • 1 saucepan
Recipe Notes
I used Carnation evaporated milk with coconut flavour as it is less fattening.
