A delicious combination of soft meringue, cream and strawberries.
Ingredients
- 4 egg whites
- 3/4 cup sugar
- 1 tsp white vinegar
- 1 tsp cornflour
- 1 tsp vanilla essence
- 300 ml whipped cream
- 250 g fresh strawberries
- 2 passionfruit optional
Method

Step 1Grease a swiss roll tin and line with baking paper. Preheat oven to 170C.

Step 2Beat egg whites until soft peaks form.

Step 3Add sugar gradually and continue beating until mixture is stiff and glossy and all sugar is dissolved.

Step 4Gently fold through vanilla, cornflour and vinegar.

Step 5Spread meringue evenly into prepared tin. Bake for 12-15 minutes.

Step 6Allow to cool completely before turning out onto sugared baking paper.

Step 7Spread with whipped cream and top with sliced strawberries.

Step 8Roll up from long side and place on serving plate, still covered with the baking paper.

Step 9Refrigerate for 24 hours.

Step 10Decorate top with strawberries and passionfruit if desired.

Recipe Notes
The pavlova roll firms up after being refrigerated and cuts easily into slices.
Passionfruit optional.
