This is a family favourite.
Ingredients
- 1 beef kidney
- 4 tsp butter
- 2 onion chopped
- 1 kg beef round steak, diced
- 2 cup boiling water
- 1 1/2 tsp Worcestershire sauce
- 1/2 tsp salt
- 1/2 tsp pepper
- 2 tsp butter
- 2 tsp plain flour
- 2 tsp parsley chopped
- 1 tsp dried rosemary
- 1 tsp dried oregano
- 1 cup plain flour
- 2 tsp plain flour
- 1/3 cup butter
- 2 tsp cold water
Method

Step 1Wash kidney, remove membranes and fat and dice into 2.5 cm cubes.

Step 2Melt 4 teaspoons butter in a heavy base saucepan and saute onion until well browned.

Step 3Add steak and kidney and brown meat all over.

Step 4Pour boiling water over meat, add worcestershire sauce, salt and pepper.

Step 5Cover and cook over a very low heat for 90 minutes or until steak is tender.

Step 6Towards end of cooking time make pastry.

Step 7Pastry: Mix 1 cup of flour and 2 teaspoons flour with salt.

Step 8Rub in butter until it resembles coarse breadcrumbs but still able to see bits of butter.

Step 9Sprinkle water over flour mixture a tablespoon at a time and mix lightly with a fork.

Step 10Use only enough water so pastry will hold together when pressed into a ball. Set aside.

Step 11Preheat oven to 200C.

Step 12Blend 2 teaspoons butter with 2 teaspoons flour and form a paste.

Step 13Drop small pellets of paste into saucepan and stir to thicken.

Step 14Put meat and sauce into a deep pie plate and sprinkle with parsley.

Step 15Roll out dough into a circle on a lightly floured board and cover pie plate.

Step 16Crimp the pastry edges and slash top to vent steam.

Step 17Bake for approximately 30 minutes or until well browned on top.
