Ingredients

  • 1 beef kidney
  • 4 tsp butter
  • 2 onion chopped
  • 1 kg beef round steak, diced
  • 2 cup boiling water
  • 1 1/2 tsp Worcestershire sauce
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 tsp butter
  • 2 tsp plain flour
  • 2 tsp parsley chopped
  • 1 tsp dried rosemary
  • 1 tsp dried oregano
  • 1 cup plain flour
  • 2 tsp plain flour
  • 1/3 cup butter
  • 2 tsp cold water

Method

  • Step 1
    Wash kidney, remove membranes and fat and dice into 2.5 cm cubes.
  • Step 2
    Melt 4 teaspoons butter in a heavy base saucepan and saute onion until well browned.
  • Step 3
    Add steak and kidney and brown meat all over.
  • Step 4
    Pour boiling water over meat, add worcestershire sauce, salt and pepper.

    Cover and cook over a very low heat for 90 minutes or until steak is tender.
  • Step 6
    Towards end of cooking time make pastry.
  • Step 7
    Pastry: Mix 1 cup of flour and 2 teaspoons flour with salt.
  • Step 8
    Rub in butter until it resembles coarse breadcrumbs but still able to see bits of butter.
  • Step 9
    Sprinkle water over flour mixture a tablespoon at a time and mix lightly with a fork.
  • Step 10
    Use only enough water so pastry will hold together when pressed into a ball. Set aside.
  • Step 11
    Preheat oven to 200C.
  • Step 12
    Blend 2 teaspoons butter with 2 teaspoons flour and form a paste.
  • Step 13
    Drop small pellets of paste into saucepan and stir to thicken.
  • Step 14
    Put meat and sauce into a deep pie plate and sprinkle with parsley.
  • Step 15
    Roll out dough into a circle on a lightly floured board and cover pie plate.
  • Step 16
    Crimp the pastry edges and slash top to vent steam.
  • Step 17
    Bake for approximately 30 minutes or until well browned on top.
