A warm salad that can be served as a main or a side dish in both winter and summer. It is nice the next day too. - Jerosha

Ingredients

  • 1/2 butternut pumpkin diced
  • 1 tbs oil
  • 1 garlic
  • 1 pinch mixed herbs
  • 125 g bacon rashers diced
  • 1 chicken breast fillet diced
  • 70 g pine nuts
  • 250 g fetta diced
  • 100 g semi-dried tomato diced
  • 160 g baby spinach rinsed

Method

  • Step 1
    Roll the pumpkin through a mix of oil, pepper, salt garlic and mix herbs to dress, then place on a baking tray and bake at 200C for 20 minutes.
  • Step 2
    Toss diced chicken through the same oil mix and bake for 30 minutes. Turn both during cooking.
  • Step 3
    Fry bacon until crispy. Cool slightly.
  • Step 4
    Combine spinach, feta, tomatoes and cooked ingredients and toss.
Recipe Notes
Use the oil from the tomatoes , if salad requires dressing. Serve warm or cold.
