A warm salad that can be served as a main or a side dish in both winter and summer. It is nice the next day too.
Ingredients
- 1/2 butternut pumpkin diced
- 1 tbs oil
- 1 garlic
- 1 pinch mixed herbs
- 125 g bacon rashers diced
- 1 chicken breast fillet diced
- 70 g pine nuts
- 250 g fetta diced
- 100 g semi-dried tomato diced
- 160 g baby spinach rinsed
Method

Step 1Roll the pumpkin through a mix of oil, pepper, salt garlic and mix herbs to dress, then place on a baking tray and bake at 200C for 20 minutes.

Step 2Toss diced chicken through the same oil mix and bake for 30 minutes. Turn both during cooking.

Step 3Fry bacon until crispy. Cool slightly.

Step 4Combine spinach, feta, tomatoes and cooked ingredients and toss.
Recipe Notes
Use the oil from the tomatoes , if salad requires dressing. Serve warm or cold.
