Spicy Potato Wedges

Ingredients

  • 1 kg potatoes medium
  • 1/4 cup light olive oil
  • 1 tbs coriander
  • 1 tbs ground cumin
  • 1 tbs paprika
  • 1/2 tsp chilli powder
  • 1 tbs coriander chopped
  • 1 pinch sea salt
  • 1 cup sour cream optional *to serve
  • 1 cup sweet chilli sauce *optional

Method

  • Step 1
    Preheat oven to 200C. Line a large baking dish with non-stick baking parchment.
  • Step 2
    Combine spices and oil in large bowl. Mix well.
  • Step 3
    Cut each potato into six wedges, add to bowl and toss to coat with oil and spices.
  • Step 4
    Arrange wedges in a single layer in the baking dish. Sprinkle generously with sea salt.
  • Step 5
    Bake for 40-45 minutes until tender and crisp, turning halfway, if desired.

Recipe Notes

Serve with sour cream and/or sweet chilli dip.

You can also serve them as a side vegetable dish with meat of your choice.
