Soft and crispy, every time.
Ingredients
- 1 kg potatoes medium
- 1/4 cup light olive oil
- 1 tbs coriander
- 1 tbs ground cumin
- 1 tbs paprika
- 1/2 tsp chilli powder
- 1 tbs coriander chopped
- 1 pinch sea salt
- 1 cup sour cream optional *to serve
- 1 cup sweet chilli sauce *optional
Method

Step 1Preheat oven to 200C. Line a large baking dish with non-stick baking parchment.

Step 2Combine spices and oil in large bowl. Mix well.

Step 3Cut each potato into six wedges, add to bowl and toss to coat with oil and spices.

Step 4Arrange wedges in a single layer in the baking dish. Sprinkle generously with sea salt.

Step 5Bake for 40-45 minutes until tender and crisp, turning halfway, if desired.

Recipe Notes
Serve with sour cream and/or sweet chilli dip.
You can also serve them as a side vegetable dish with meat of your choice.
