Spiced Pork Chops with Sweet Potato

A sweet and sour mix of cubed sweet potato and diced apple and pork chops with an allspice, cinnamon and chilli blend.

Ingredients

  • 1 tbs olive oil
  • 4 pork chops
  • 1 onion chopped
  • 2 cloves garlic clove finely chopped
  • 2 tbs plain flour
  • 450 ml chicken stock (liquid)
  • 400 g canned chopped tomato
  • 1/2 tsp ground allspice
  • 1/2 tsp ground cinnamon
  • 1 chilli optional
  • 250 g apple cooked cored cored diced peeled
  • 700 g sweet potato cubed
  • 1 pinch salt and pepper

Method

  • Step 1
    Pre-heat slow cooker.
  • Step 2
    Heat oil in a large frying pan, add the pork and brown over high heat.
  • Step 3
    Lift out with a slotted spoon and transfer to a plate.
  • Step 4
    Add onion to the pan and fry, stirring for 5 minutes or until lightly browned. Mix in the garlic then the flour.
  • Step 5
    Gradually stir in the stock and tomatoes, then the spices and chilli, if using, and season to taste with salt and pepper, bring to the boil.
  • Step 6
    Put pork in the slow cooker, add the apple, sweet potato and pour over the sauce.
  • Step 7
    Cover and cook on high for 7-8 hours.
  • Step 8
    Spoon into bowls and serve with warm crusty bread.

Recipe Notes

This one I have tried and yummy it is. I took the seeds out of the chilli or you could use a mild chilli powder, worked just as well or use genn chilli as they are not as hot. I have also used diced pork in 1 inch cubes for this and they worked fine. Boned spare ribs can be used.
