This slow-cooked soup is delicious and loved by all.
Ingredients
- 1 1/5 kg jap pumpkin cut into pieces peeled
- 2 potatoes medium peeled quartered
- 1 brown onion quartered
- 3 tsp Vegeta Gourmet vegetable stock powder
- 2 tsp curry powder
- 4 cups hot water
- 1 tsp pepper *to taste
- 1 cup Woolworths Thickened Cream
Method

Step 1Add pumpkin, potato and onion to slow cooker.

Step 2Dissolve the Vegeta in 4 cups of hot water and pour over vegetables.

Step 3Sprinkle in curry powder and pepper.

Step 4Turn slow cooker on high for 6-8 hours.

Step 5Once cooked, blend until smooth. Add cream and stir.

Step 6Serve with crusty bread or dinner rolls.
Recipe Notes
I have also added half a tub of Philadelphia cream before. It reduces the fat content and tastes divine.
I have also omitted the curry powder before and it was still delicious.
