Soft silverbeet and salty fetta cheese encased in a filo pastry.
Ingredients
- 2 bunch silverbeet sliced washed
- 375 g filo pastry sheets
- 1 onion diced
- 1 cup fetta crumbled
- 1 cup cheese grated
- 1 tbs mixed dried herbs
- 1/4 cup basil cut into strips
- 10 egg
- 1/4 cup cream
- 1/2 tsp salt and pepper
Method

Step 1Preheat oven to 180C.

Step 2Whisk eggs, cream, salt and pepper together.

Step 3Mix all other ingredients together and add in egg mixture.

Step 4Line a greased, deep baking dish with pastry, reserving 8 sheets.

Step 5Add ingredients to dish and lay the remaining filo on top.

Step 6Brush with melted butter and bake until egg is fully cooked.

Recipe Notes
Best served with a simple, lightly dressed leafy salad and filo drizzled with Caesar dressing and cracked pepper. Remove stem, wash and slice silverbeet, and chiffonade cut (cut into long, thin strips) basil and use bitter cheese.
