Ingredients

  • 6 egg
  • 1/4 cup milk
  • 1 tbs oil
  • 4 mushrooms sliced
  • 2 slices hot salami chopped
  • 1 slice Gypsy smoked bacon roughly chopped
  • 2 mini Roma golds tomato diced
  • 1 cup tasty cheese shaved
  • 1 spring onion
  • 1/4 tsp wholegrain mustard

Method

  • Step 1
    Break eggs into a bowl and whisk in milk, add to fry pan on low heat and stir constantly until cooked as desired.
  • Step 2
    Add oil to a separate fry pan. Add mushrooms and fry on medium - low heat for 2-3 minutes, then add ham.
  • Step 3
    Add salami to the eggs and toss to warm.
  • Step 4
    Serve eggs on toasted light rye bread with butter, top with cheese, spring onion and tomato.
  • Step 5
    Serve mushroom and ham onto plate and top ham with mustard.
