Perfect for those late morning wake ups after a big night out.
Ingredients
- 6 egg
- 1/4 cup milk
- 1 tbs oil
- 4 mushrooms sliced
- 2 slices hot salami chopped
- 1 slice Gypsy smoked bacon roughly chopped
- 2 mini Roma golds tomato diced
- 1 cup tasty cheese shaved
- 1 spring onion
- 1/4 tsp wholegrain mustard
Method

Step 1Break eggs into a bowl and whisk in milk, add to fry pan on low heat and stir constantly until cooked as desired.

Step 2Add oil to a separate fry pan. Add mushrooms and fry on medium - low heat for 2-3 minutes, then add ham.

Step 3Add salami to the eggs and toss to warm.

Step 4Serve eggs on toasted light rye bread with butter, top with cheese, spring onion and tomato.

Step 5Serve mushroom and ham onto plate and top ham with mustard.
