Easy to make, rich sauce for fresh or dried pasta.
Ingredients
- 4 sausage sliced
- 1 brown onion finely chopped
- 1 garlic clove finely chopped
- 1 1/2 tbs olive oil
- 400 g canned chopped tomato drained
- 140 ml cream
Method

Step 1Fry the onion in oil on a medium-low heat until soft and almost transparent. Remove from pan.

Step 2Brown the sausages, adding extra oil if necessary.

Step 3Add the onion and garlic to the sausages and stir for 1 minute.

Step 4Add tomatoes and cream.

Step 5Simmer until thick.
Recipe Notes
The onion may be omitted. Evaporated milk or yoghurt may be used instead of cream. If using yoghurt, add it towards the end of the cooking time. Try different flavoured sausages or add herbs. Canned tomato can be substituted with 4 plump tomatoes skinned, chopped.
