A light rice-based casserole. No heavy sauce.
Ingredients
- 480 g Italian pork sausage
- 480 g Italian pork sausage hot
- 150 g white rice uncooked
- 300 g carrot chopped
- 150 g celery stalk chopped
- 300 g green beans chopped
- 250 ml chicken stock (liquid)
- 120 ml water
Method

Step 1Brown sweet and hot sausage mince and drain.

Step 2Grease a large covered casserole dish.

Step 3Add, in order, rice, carrots, celery, green beans, sausage, stock and water.

Step 4Cover and bake at 180C for 45 minutes.

Step 5Remove cover, stir casserole and return uncovered to the oven for 15 minutes more.

Recipe Notes
We call this "Mum's Funeral Casserole" since she would always make one to take to neighbours and friends who had suffered a loss.
