A light rice-based casserole. No heavy sauce.

Ingredients

  • 480 g Italian pork sausage
  • 480 g Italian pork sausage hot
  • 150 g white rice uncooked
  • 300 g carrot chopped
  • 150 g celery stalk chopped
  • 300 g green beans chopped
  • 250 ml chicken stock (liquid)
  • 120 ml water

Method

  • Step 1
    Brown sweet and hot sausage mince and drain.
  • Step 2
    Grease a large covered casserole dish.
  • Step 3
    Add, in order, rice, carrots, celery, green beans, sausage, stock and water.

  • Step 4
    Cover and bake at 180C for 45 minutes.
  • Step 5
    Remove cover, stir casserole and return uncovered to the oven for 15 minutes more.

Recipe Notes

We call this "Mum's Funeral Casserole" since she would always make one to take to neighbours and friends who had suffered a loss.
