This is a hearty, slow cooker recipe that the whole family will enjoy.
Ingredients
- 4 chicken breast fillets cut into pieces
- 4 potatoes diced medium
- 3 carrots sliced
- 1 onion diced large
- 3 zucchinis sliced
- 6 bacon rashers sliced
- 1/2 cup white wine
- 1/2 cup chicken stock (liquid)
- 2 garlic cloves crushed
- 300 ml pure cream
- 2 tbs vegetable stock powder
- 1 tbs chicken stock powder
- 1 tbs soy sauce
- 1 tbs mixed herbs
- 1 tsp salt and pepper *to taste
Method

Step 1In a large pan add a generous knob of butter and fry chicken, bacon and onion together until browned.

Step 2Add garlic, soy, stock powders and herbs near the end of the browning stage and stir through.

Step 3To the slow cooker add wine, stock, zucchini slices, chicken, potatoes and carrots.

Step 4Pour in the cream and mix through.

Step 5Cook on low for 8 hours or on high for 4-6 hours.

Step 6Serve in bowls with crusty bread or on a bed of rice.

Recipe Notes
Liquid will not be overly thick, but the potatoes will thicken it as they break down.
I prefer to soak it up with bread, but you can add some cornflour if you want a thicker sauce.
I also sometimes add a can of diced tomatoes to the mix for something a little different.
Use mixed herbs, oregano or tarragon.
It's a recipe you can play around with and add your own favourite vegetables and herbs too.
