Ingredients

  • 1 onion sliced
  • 1/2 cup rogan josh Indian curry paste
  • 4 cloves garlic chopped
  • 1 bunch coriander chopped
  • 8 cup mixed vegetables
  • 400 g canned chickpeas
  • 4 cup baby spinach
  • 2 egg boiled quartered

Method

  • Step 1
    Heat 1 tablespoon of oil in a large saucepan.
  • Step 2
    Add onion, curry paste, garlic and coriander and cook for 3 minutes.
  • Step 3
    Add vegetables and half a cup boiling water and stir well.
  • Step 4
    Add chickpeas and their juices and season well with salt and pepper.
  • Step 5
    Cover and simmer over a low heat for 20-25 minutes, stirring occasionally.
  • Step 6
    Add more water if necessary.
  • Step 7
    Stir through spinach and cook 1 minute.
  • Step 8
    Transfer to bowls and top with hard-boiled eggs.
  • Step 9
    Garnish with coriander leaves.
