A quick curry that's healthy and tasty.
Ingredients
- 1 onion sliced
- 1/2 cup rogan josh Indian curry paste
- 4 cloves garlic chopped
- 1 bunch coriander chopped
- 8 cup mixed vegetables
- 400 g canned chickpeas
- 4 cup baby spinach
- 2 egg boiled quartered
Method

Step 1Heat 1 tablespoon of oil in a large saucepan.

Step 2Add onion, curry paste, garlic and coriander and cook for 3 minutes.

Step 3Add vegetables and half a cup boiling water and stir well.

Step 4Add chickpeas and their juices and season well with salt and pepper.

Step 5Cover and simmer over a low heat for 20-25 minutes, stirring occasionally.

Step 6Add more water if necessary.

Step 7Stir through spinach and cook 1 minute.

Step 8Transfer to bowls and top with hard-boiled eggs.

Step 9Garnish with coriander leaves.
