A rocky road recipe I have made for years, which everyone absolutely loves and asks for the recipe.
Ingredients
- 500 g marshmallows
- 375 g milk chocolate melts
- 375 g dark chocolate melts
- 125 g copha
- 1/4 cup mixed nuts crushed
- 3/4 cup glace cherries
- 1 cup Rice Bubbles
Method

Step 1Line a lamington pan with foil including the sides.

Step 2Lay marshmallows flat covering the entire bottom of the tray

Step 3Sprinkle crushed nuts, rice bubbles and chopped cherries/Turkish Delight over the marshmallow layer, ensuring the ingredients fill the gaps between marshmallows.

Step 4In a double saucepan, melt the chocolate and copha together.

Step 5Pour melted hot chocolate over marshmallow mixture and let sit to allow the marshmallows to soften.

Step 6Using a fork, lightly mash the marshmallows to make them spread. The end result should look like swirls of brown, white and pink and a "rocky, bumpy" top.

Step 7Refrigerate to set and cut into bite size pieces to serve.

Recipe Notes
I've made this for so many functions and for fetes where it is always a big hit. I prefer to use the brands mentioned for quality but you can use your brand of choice if preferred. Cut up pieces will store for months in an airtight container in the fridge. I prefer to use Pascal marshmallows and Nestle chocolate melts. Chopped Turkish delight bars can substitute glace cherries.
