A wonderfully fresh salad you just can't stop eating. I'm happy to have this as a meal with some freshly baked bread. Beautiful salad served with any grilled, barbecue or roasted meats, chicken or seafood. The balsamic glaze gives it a sweet zingy taste.
Ingredients
- 4 cups rocket leaves firmly packed
- 1 pear cored cored just ripe thinly sliced
- 1 Spanish onion thinly sliced
- 2 tbs pine nuts roasted
- 100 g blue cheese
- 1 tsp salt and pepper
- 3 tbs balsamic glaze
- 2 tbs olive oil
Method

Step 1Combine rocket leaves, sliced pear, onion, pine nuts and blue vein. Season with salt and pepper to taste.

Step 2Drizzle balsamic glaze and a little virgin olive oil over salad and mix gently.
Recipe Notes
If you don't like blue vein cheese or Parmesan cheese add a nice sharp cheddar.
