A wonderfully fresh salad you just can't stop eating. I'm happy to have this as a meal with some freshly baked bread. Beautiful salad served with any grilled, barbecue or roasted meats, chicken or seafood. The balsamic glaze gives it a sweet zingy taste. - Kali Moschos

Ingredients

  • 4 cups rocket leaves firmly packed
  • 1 pear cored cored just ripe thinly sliced
  • 1 Spanish onion thinly sliced
  • 2 tbs pine nuts roasted
  • 100 g blue cheese
  • 1 tsp salt and pepper
  • 3 tbs balsamic glaze
  • 2 tbs olive oil

Method

  • Step 1
    Combine rocket leaves, sliced pear, onion, pine nuts and blue vein. Season with salt and pepper to taste.

    Drizzle balsamic glaze and a little virgin olive oil over salad and mix gently.
Recipe Notes

If you don't like blue vein cheese or Parmesan cheese add a nice sharp cheddar.
