This was perfect with steak.
Ingredients
- 750 g potato cubed
- 350 g onion cut into wedges peeled
- 1/4 cup balsamic vinegar
- 1 tbs fresh thyme
- 1/2 tsp salt
- 1/4 tsp ground pepper
- 2 tbs olive oil
Method

Step 1Preheat oven to 200C.

Step 2Poor oil into a shallow tray. Add the potatoes and onions and toss to coat with oil.

Step 3Cover with foil and roast for 30 minutes. Remove foil and increase the heat to 230°c then add remaining ingredients and toss well.

Step 4Continue to roast, tossing occasionally, for 30 to 40 minutes or until the vegetables are browned and potatoes crisp on the edges.

These had a nice edge to them. Something simple but very tasty and perfect with steak or chicken.
