Roasted Balsamic Potatoes with Onions

Ingredients

  • 750 g potato cubed
  • 350 g onion cut into wedges peeled
  • 1/4 cup balsamic vinegar
  • 1 tbs fresh thyme
  • 1/2 tsp salt
  • 1/4 tsp ground pepper
  • 2 tbs olive oil

Method

  • Step 1
    Preheat oven to 200C.
  • Step 2
    Poor oil into a shallow tray. Add the potatoes and onions and toss to coat with oil.
  • Step 3
    Cover with foil and roast for 30 minutes. Remove foil and increase the heat to 230°c then add remaining ingredients and toss well.
  • Step 4
    Continue to roast, tossing occasionally, for 30 to 40 minutes or until the vegetables are browned and potatoes crisp on the edges.
Recipe Notes
These had a nice edge to them. Something simple but very tasty and perfect with steak or chicken.
