An easy tomato-based lentil soup that's full of flavour and good for you too.

Ingredients

  • 375g red lentils
  • 1L water
  • 2 tbs butter
  • 1 red capsicum diced
  • 2 zucchinis diced medium
  • 1 onion large finely chopped
  • 1 leek thinly sliced
  • 3 carrots sliced
  • 2 carrots grated
  • 450g canned condensed tomato soup
  • 500ml chicken stock (liquid)
  • 1 tbs parsley chopped
  • 1 tbs parmesan cheese optional shaved
  • 1 pinch salt and pepper *to taste

Method

  • Step 1
    Place lentils in a large saucepan and cover with water.
  • Step 2
    Cook the lentils until soft. Do not allow the lentils to dry out.
  • Step 3
    Fry all the vegetables in butter/margarine until soft, then add to the lentils.

  • Step 4
    Add chicken stock, tomato soup, and simmer until soup has thickened. Season to taste.
  • Step 5
    Serve with shaved parmesan and chopped parsley or coriander.
