An easy tomato-based lentil soup that's full of flavour and good for you too.
Ingredients
- 375g red lentils
- 1L water
- 2 tbs butter
- 1 red capsicum diced
- 2 zucchinis diced medium
- 1 onion large finely chopped
- 1 leek thinly sliced
- 3 carrots sliced
- 2 carrots grated
- 450g canned condensed tomato soup
- 500ml chicken stock (liquid)
- 1 tbs parsley chopped
- 1 tbs parmesan cheese optional shaved
- 1 pinch salt and pepper *to taste
Method

Step 1Place lentils in a large saucepan and cover with water.

Step 2Cook the lentils until soft. Do not allow the lentils to dry out.

Step 3Fry all the vegetables in butter/margarine until soft, then add to the lentils.

Step 4Add chicken stock, tomato soup, and simmer until soup has thickened. Season to taste.

Step 5Serve with shaved parmesan and chopped parsley or coriander.
