Ingredients

  • 2 cup rhubarb finely chopped
  • 1 1/2 cup pear finely chopped peeled
  • 1/2 tsp baking powder
  • 1/2 tsp ground cloves
  • 1 tsp ground cinnamon
  • 1 tsp salt
  • 3 cup self-raising flour
  • 4 egg lightly beaten
  • 2 tsp vanilla essence
  • 3/4 cup vegetable oil
  • 1 3/4 cup sugar
  • 1/2 cup mixed nuts coarsely chopped

Method

  • Step 1
    Mix all the dry ingredients together. Add the fruit, oil and eggs.
  • Step 2
    Pour into greased loaf pans.
  • Step 3
    Bake at 180C for 50-60 minutes or until a skewer inserted into the centre comes out clean.
  • Step 4
    Allow to cool before removing from pan. Cool completely before slicing.
