Ingredients

  • 200 g fresh raspberries
  • 300 ml thickened cream
  • 1 tbs icing sugar
  • 1 tsp vanilla essence

Method

  • Step 1
    Reserve a few raspberries for garnish.
  • Step 2
    Slightly crush remaining raspberries with a fork.
  • Step 3
    Whip the cream with the sugar and essence.
  • Step 4
    Layer the cream and raspberries into individual dishes or one large serving dish.
  • Step 5
    Swirl the layers slightly to create a ripple effect.
  • Step 6
    Scatter with the reserved berries.
  • Step 7
    Place in fridge for 10 minutes to let the flavours develop.
