The simplest of desserts, lets fresh raspberries shine, but frozen could be used instead.
Ingredients
- 200 g fresh raspberries
- 300 ml thickened cream
- 1 tbs icing sugar
- 1 tsp vanilla essence
Method

Step 1Reserve a few raspberries for garnish.

Step 2Slightly crush remaining raspberries with a fork.

Step 3Whip the cream with the sugar and essence.

Step 4Layer the cream and raspberries into individual dishes or one large serving dish.

Step 5Swirl the layers slightly to create a ripple effect.

Step 6Scatter with the reserved berries.

Step 7Place in fridge for 10 minutes to let the flavours develop.
