Quick Bacon and Egg Pie

Ingredients

  • 5 bacon rashers
  • 6 egg
  • 2 sheets puff pastry
  • 1 tbs wholegrain mustard
  • 1 tbs Worcestershire sauce
  • 1 pinch salt and pepper
  • 1 cup cheese grated
  • 1 tomato sliced

Method

  • Step 1
    Lay one sheet of puff pastry onto base of a pie dish. Blind bake for 10 minutes if desired.
  • Step 2
    Trim fat from bacon and lightly coat with mustard.
  • Step 3
    Place a layer of bacon into pie dish.
  • Step 4
    Crack the eggs over the top of bacon layer and season with Worcestershire sauce, salt and pepper. Egg yolks can be pierced if desired.
  • Step 5
    Layer the remaining bacon over the top of eggs and finish pie with remaining puff pastry. Add grated cheese and sliced tomato if desired.
  • Step 6
    Pierce top sheet of pastry in approximately 4 places.
  • Step 7
    Bake at 180C for 20-30 minutes or until pastry is golden brown.
