An easy to prepare dish that is a hit for lunch the next day.
Ingredients
- 5 bacon rashers
- 6 egg
- 2 sheets puff pastry
- 1 tbs wholegrain mustard
- 1 tbs Worcestershire sauce
- 1 pinch salt and pepper
- 1 cup cheese grated
- 1 tomato sliced
Method

Step 1Lay one sheet of puff pastry onto base of a pie dish. Blind bake for 10 minutes if desired.

Step 2Trim fat from bacon and lightly coat with mustard.

Step 3Place a layer of bacon into pie dish.

Step 4Crack the eggs over the top of bacon layer and season with Worcestershire sauce, salt and pepper. Egg yolks can be pierced if desired.

Step 5Layer the remaining bacon over the top of eggs and finish pie with remaining puff pastry. Add grated cheese and sliced tomato if desired.

Step 6Pierce top sheet of pastry in approximately 4 places.

Step 7Bake at 180C for 20-30 minutes or until pastry is golden brown.
