This is a hearty, "no-frills" bake sure to fill the hungry hordes. Great way to use up leftover BBQ sausages. - jillhk

Ingredients

  • 6 potato cooked mashed
  • 6 sausage chopped cooked
  • 6 egg
  • 1 cup cheese grated

Method

  • Step 1
    Spread mashed potato in base of casserole dish.
  • Step 2
    Place sausages over potato.
  • Step 3
    Break eggs onto sausage layer.
  • Step 4
    Sprinkle grated cheese on top.
  • Step 5
    Bake at 180C for approximately 30 minutes, until eggs are cooked as desired.

Equipment

  • 1 casserole dish
Recipe Notes
The mashed potato can be made as plain or as fancy as you like with butter, shallots, sour cream or garlic. Vary the type and quantity of sausages to your taste.
