Ingredients

  • 3 potato chopped
  • 2 tbs dried breadcrumbs
  • 4 thin pork sausage
  • 2 tsp oil
  • 1 tbs oil
  • 4 spring onion chopped
  • 2 bacon rashers chopped
  • 1/2 cup milk
  • 3 egg lightly beaten
  • 1/2 cup self-raising flour
  • 130 g cream-style canned corn
  • 1/2 cup cheese grated

Onion Gravy

  • 25 g butter
  • 1 onion sliced
  • 1 tbs plain flour
  • 1 beef stock cube
  • 1 cup water
  • 1 tsp Worcestershire sauce

Method

  • Step 1
    Preheat oven to 180C.
  • Step 2
    Grease a 10 cup casserole dish. Sprinkle with the breadcrumbs.
  • Step 3
    Cook and mash the potatoes.
  • Step 4
    Heat oil, brown and cook the sausages. Cool. Cut into 2 cm pieces.
  • Step 5
    Heat the extra oil, add the spring onions and bacon, cook until bacon is crisp. Remove from pan.
  • Step 6
    Reserve the pan to make onion gravy if desired.
  • Step 7
    Combine the mashed potatoes, sausage, bacon mix, milk, eggs, flour, corn and cheese in a bowl. Mix well. Pour into prepared dish.
  • Step 8
    Cook for 40-60 minutes.
  • Step 9
    Onion Gravy: Heat butter in pan, add the sliced onion, cook until soft. Add flour, cook for 2 minutes.
  • Step 10
    Add the beef stock cube, water and the Worcestershire sauce. Cook, stirring, until mixture boils and thickens.
Recipe Notes
I quite often substitute a store bought onion gravy in lieu if running short of time.
