A different way to dress up sausages with mashed potato and corn. Served with onion gravy, if desired
Ingredients
- 3 potato chopped
- 2 tbs dried breadcrumbs
- 4 thin pork sausage
- 2 tsp oil
- 1 tbs oil
- 4 spring onion chopped
- 2 bacon rashers chopped
- 1/2 cup milk
- 3 egg lightly beaten
- 1/2 cup self-raising flour
- 130 g cream-style canned corn
- 1/2 cup cheese grated
Onion Gravy
- 25 g butter
- 1 onion sliced
- 1 tbs plain flour
- 1 beef stock cube
- 1 cup water
- 1 tsp Worcestershire sauce
Method

Step 1Preheat oven to 180C.

Step 2Grease a 10 cup casserole dish. Sprinkle with the breadcrumbs.

Step 3Cook and mash the potatoes.

Step 4Heat oil, brown and cook the sausages. Cool. Cut into 2 cm pieces.

Step 5Heat the extra oil, add the spring onions and bacon, cook until bacon is crisp. Remove from pan.

Step 6Reserve the pan to make onion gravy if desired.

Step 7Combine the mashed potatoes, sausage, bacon mix, milk, eggs, flour, corn and cheese in a bowl. Mix well. Pour into prepared dish.

Step 8Cook for 40-60 minutes.

Step 9Onion Gravy: Heat butter in pan, add the sliced onion, cook until soft. Add flour, cook for 2 minutes.

Step 10Add the beef stock cube, water and the Worcestershire sauce. Cook, stirring, until mixture boils and thickens.
Recipe Notes
I quite often substitute a store bought onion gravy in lieu if running short of time.
