Pork Chops with Pear and Red Onion Chutney

Ingredients

  • 1 red onion coarsely chopped
  • 3 Packham pear coarsely chopped cored cored firm halved
  • 1/3 cup red wine vinegar
  • 1/2 cup brown sugar firmly packed
  • 1/2 tsp chilli flakes
  • 4 pork chops

Method

  • Step 1
    Place the onion, pear, vinegar, brown sugar and chilli flakes into a medium saucepan over a medium-high heat.
  • Step 2
    Bring to the boil.
  • Step 3
    Reduce heat to low and simmer, stirring occasionally, for 20 minutes or until mixture thickens and pear is tender.
  • Step 4
    While chutney is cooking, heat the grill and grill pork chops to preference.
  • Step 5
    Top cooked pork chops with a generous helping of chutney and serve with vegetables of choice.
  • Step 6
    Season with salt and pepper if desired.
Recipe Notes

I use the electric grilling machine to do my chops, and serve this with potato/sweet potato mash and green vegetables. The sauce doesn't tend to thicken too much, but it's still delightful!
