Ingredients

  • 6 midloin pork chops rindless
  • 2 tbs olive oil
  • 1 onion medium sliced
  • 2 red capsicum cored deseeded sliced
  • 1 garlic clove crushed
  • 425 g canned whole tomatoes peeled
  • 2 tbs tomato paste
  • 1/2 cup water
  • 1 tsp salt
  • 2 tsp basil chopped fresh

Method

  • Step 1
    Heat oil in a large frying pan and brown chops on both sides. Set aside.
  • Step 2
    Sauté the onion, capsicum and garlic until soft.
  • Step 3
    Add seasonings, peeled tomatoes, tomato paste and water. Stir until the sauce boils.
  • Step 4
    Put the pork chops back in the pan, cover and simmer very gently for 1 hour until they're tender.
  • Step 5
    Serve with pasta of choice.
Recipe Notes
I serve this with spaghetti.
