An Italian recipe with lovely flavours.
Ingredients
- 6 midloin pork chops rindless
- 2 tbs olive oil
- 1 onion medium sliced
- 2 red capsicum cored deseeded sliced
- 1 garlic clove crushed
- 425 g canned whole tomatoes peeled
- 2 tbs tomato paste
- 1/2 cup water
- 1 tsp salt
- 2 tsp basil chopped fresh
Method

Step 1Heat oil in a large frying pan and brown chops on both sides. Set aside.

Step 2Sauté the onion, capsicum and garlic until soft.

Step 3Add seasonings, peeled tomatoes, tomato paste and water. Stir until the sauce boils.

Step 4Put the pork chops back in the pan, cover and simmer very gently for 1 hour until they're tender.

Step 5Serve with pasta of choice.
