A moist slice that uses fresh plums.
Ingredients
- 125 g butter chopped
- 1/2 cup caster sugar
- 2 egg
- 2 cup self-raising flour sifted
- 300 ml sour cream
- 12 plum sliced
- 1/3 cup plain flour
- 1/2 cup brown sugar
- 1/2 tsp ground cinnamon
- 1 cup flaked almonds
- 25 g butter
Method

Step 1Beat the butter and sugar together.

Step 2Add the eggs, one at a time, beating well after each.

Step 3Fold in half the flour to the mixture.

Step 4Stir in the sour cream and remaining flour.

Step 5Spoon mixture into a greased and lined 18 x 28 cm slab tin.

Step 6Carefully spread the plums over the mixture

Step 7Combine the flour, sugar and cinnamon in a bowl.

Step 8Rub in the butter until it resembles breadcrumbs.

Step 9Add almonds and mix well.

Step 10Crumble mixture over the plums and bake in a moderate oven for 45 minutes or until cooked.
Recipe Notes
425 g tins of peaches, plums or apricots can be substituted for the plums.
