Ingredients

  • 125 g butter chopped
  • 1/2 cup caster sugar
  • 2 egg
  • 2 cup self-raising flour sifted
  • 300 ml sour cream
  • 12 plum sliced
  • 1/3 cup plain flour
  • 1/2 cup brown sugar
  • 1/2 tsp ground cinnamon
  • 1 cup flaked almonds
  • 25 g butter

Method

  • Step 1
    Beat the butter and sugar together.
  • Step 2
    Add the eggs, one at a time, beating well after each.
  • Step 3
    Fold in half the flour to the mixture.
  • Step 4
    Stir in the sour cream and remaining flour.
  • Step 5
    Spoon mixture into a greased and lined 18 x 28 cm slab tin.
  • Step 6
    Carefully spread the plums over the mixture
  • Step 7
    Combine the flour, sugar and cinnamon in a bowl.
  • Step 8
    Rub in the butter until it resembles breadcrumbs.
  • Step 9
    Add almonds and mix well.
  • Step 10
    Crumble mixture over the plums and bake in a moderate oven for 45 minutes or until cooked.
Recipe Notes

425 g tins of peaches, plums or apricots can be substituted for the plums.
