Creamy tasty pineapple salad. Very showy with halved pineapples used to put salad into. - Jaide Carpenter

Ingredients

2 pineapple cubed halved large
1 1/2 cup shredded coconut
1 cup low-fat sour cream
1/2 cup low-fat mayonnaise
1/2 cup light cream
4 celery stick cut diagonally
1 parsley *to decorate

Method

Step 1

In a separate bowl, mix sour cream, mayonnaise and cream.
Step 2

Pour over pineapple and celery and mix through.
Step 3

Sprinkle with coconut and mix through.
Step 4

Place pineapple cream mixture into pineapple shells and garnish with parsley.
