I have been making this for years and my kids still ask for it now they are all grown up.
Ingredients
- 2 cup plain flour
- 1 cup self-raising flour
- 1 cup icing sugar
- 225g soft butter
- 2 egg
- 4 apple cooked
Method

Step 1Sieve flour and icing sugar in a bowl. Rub in the softened butter until mixture resembles breadcrumbs.

Step 2Add beaten eggs. Fork through first and then mix with hands until all comes together into a soft ball. Halve mixture for bottom and top of pie dish.

Step 3With first half, place on floured piece of glad bake or similar. Flour rolling pin thoroughly and roll mixture out until size needed for pie dish. After placing dough into pie dish, cut to fit and press together any holes that may have appeared.

Step 4Spoon cooked apple into the pie dish and repeat the process for the top of the pie.

Step 5Once the top is on the pie, brush pastry with milk and sprinkle with sugar. If forking around edge for decoration, ensure fork is well floured or pastry will break.

Step 6Bake at 180C until golden brown. Serve with cream, custard or ice-cream.

Recipe Notes
This pastry is fragile so handle carefully. If you find dough too soft and it falls apart, just roll out again. Once you have mastered it, you will make it time and time again.
