Don't let the name put you off. This is a good thick winter soup to warm you up and is very economical.
Ingredients
- 1 tbs oil
- 2 parsnip chopped peeled
- 1 green apple chopped large peeled
- 1 onion chopped peeled
- 1 tsp curry powder
- 4 cups chicken stock (liquid)
- 1/4 cup cream
Method

Step 1Heat oil in pot on medium heat and add vegetables and fruit. Fry for a couple of minutes

Step 2Put lid on pot and sweat vegetables and fruit for around ten minutes.

Step 3Add curry powder and cook for 1 minute to release curry flavour.

Step 4Add chicken stock to pot and bring to a boil.

Step 5Reduce heat and simmer until vegetable are tender. Remove from heat.

Step 6Blend to a smooth consistency. Add cream and stir.
Recipe Notes
The curry powder can be adjusted to suit personal taste but don't omit it as is balances the sweetness of the vegetables.
