Don't let the name put you off. This is a good thick winter soup to warm you up and is very economical.

Ingredients

  • 1 tbs oil
  • 2 parsnip chopped peeled
  • 1 green apple chopped large peeled
  • 1 onion chopped peeled
  • 1 tsp curry powder
  • 4 cups chicken stock (liquid)
  • 1/4 cup cream

Method

  • Step 1
    Heat oil in pot on medium heat and add vegetables and fruit. Fry for a couple of minutes
  • Step 2
    Put lid on pot and sweat vegetables and fruit for around ten minutes.
  • Step 3
    Add curry powder and cook for 1 minute to release curry flavour.
  • Step 4
    Add chicken stock to pot and bring to a boil.
  • Step 5
    Reduce heat and simmer until vegetable are tender. Remove from heat.
  • Step 6
    Blend to a smooth consistency. Add cream and stir.
Recipe Notes

The curry powder can be adjusted to suit personal taste but don't omit it as is balances the sweetness of the vegetables.
