Ingredients

  • 2 cup mixed salad leaves washed
  • 2 cup baby spinach washed
  • 20 semi-dried tomato thinly sliced
  • 1 red onion medium thinly sliced
  • 100 g parmesan cheese shaved
  • 100 g pine nuts
  • 1/4 cup white wine vinegar
  • 1/4 cup red wine vinegar
  • 1/2 cup extra virgin olive oil

Method

  • Step 1
    Place lettuce, spinach, tomatoes and onion in large bowl.
  • Step 2
    Add cheese.
  • Step 3
    Dry roast pine nuts in saucepan over medium heat until golden brown, strring and turning constantly. Remove from heat and cool.
  • Step 4
    Add pine nuts to bowl and gently toss.
  • Step 5
    Transfer ingredients into a serving bowl.
  • Step 6
    Place vinegars and oil in a jar and shake.
  • Step 7
    Serve salad with dressing on the side.
