Plain biscuits filled with lovely orange cream. The basic biscuit recipe is great for cooking with kids. They love to roll it and cut out shapes, then decorate the shapes before they are cooked, or with icing after they are cooked. - greengem

Ingredients

  • 1 2/3 cup plain flour
  • 125 g butter chopped
  • 1/4 cup sugar
  • 1 egg
  • 1 tsp vanilla essence

Orange cream filling

  • 60 g butter softened
  • 2 tsp orange rind, finely grated
  • 1 1/4 cup icing sugar sifted
  • 2 tbs orange juice

Method

  • Step 1
    Sift the flour into a bowl and rub in the butter until the mixture looks like coarse breadcrumbs.
  • Step 2
    Add sugar, egg and vanilla, mixing well.
  • Step 3
    Turn the dough onto a lightly floured surface and knead lightly.
  • Step 4
    Roll out to 5 mm thickness.
  • Step 5
    Using a 6 cm plain cutter, cut out rounds, then press the edges with a fork. Place on paper lined baking trays.
  • Step 6
    Bake at 180C for 12-15 minutes or until light golden brown. Cool on wire racks.
  • Step 7
    Orange filling: Cream butter and orange rind until light and fluffy.
  • Step 8
    Add sifted icing sugar, beat until combined, then stir in orange juice.
  • Step 9
    Spread half the rounds with orange filling and top with the remaining pastry rounds.
