Put all ingredients in sit back with a glass of wine and 30 minutes later dinner is done.
Ingredients
- 2 cups arborio rice
- 5 cups Massel* Chicken Style Liquid Stock
- 120g butter
- 700g pumpkin, diced
- 5 bacon rashers, diced
- 1 onion, finely chopped
- 200g mushrooms, sliced
- 1 tbs parmesan cheese *to serve

Method

Step 1Preheat oven to 190C.

Step 2Melt butter and fry onion, bacon and mushroom until onion is transparent and bacon is almost crisp.

Step 3Put all ingredients in a casserole dish. Mix well.

Step 4Cook, uncovered, for 30 minutes.

I have made this a couple of times and could not believe how easy it was. No constant stirring, time to sit and relax for a few minutes. Sometimes it needs a few more minutes to absorb the liquid. This dish is best eaten on the day you cook it. Plenty of parmesan or Romano cheese. Yum Yum.
