No-stir pumpkin risotto

Ingredients

  • 2 cups arborio rice
  • 5 cups Massel* Chicken Style Liquid Stock
  • 120g butter
  • 700g pumpkin, diced
  • 5 bacon rashers, diced
  • 1 onion, finely chopped
  • 200g mushrooms, sliced
  • 1 tbs parmesan cheese *to serve

Method

  • Step 1
    Preheat oven to 190C.
  • Step 2
    Melt butter and fry onion, bacon and mushroom until onion is transparent and bacon is almost crisp.

  • Step 3
    Put all ingredients in a casserole dish. Mix well.
  • Step 4
    Cook, uncovered, for 30 minutes.

  • 1 frying pan
  • 1 casserole dish
Recipe Notes

I have made this a couple of times and could not believe how easy it was. No constant stirring, time to sit and relax for a few minutes. Sometimes it needs a few more minutes to absorb the liquid. This dish is best eaten on the day you cook it. Plenty of parmesan or Romano cheese. Yum Yum.
