This is great for using up leftover egg whites. It's quick and easy to make and you don't need to cook it.
Ingredients
- 2 egg whites
- 1 cup caster sugar
- 3 tsp gelatine powder
- 1 cup boiling water
- 500 ml thickened cream
- 1 cup fresh strawberries *to decorate
Method

Step 1Dissolve gelatine in boiling water and place in fridge to cool.

Step 2Beat together egg whites, caster sugar and the dissolved gelatine and water. Mix with an electric mixer for about 10 minutes or until very stiff.

Step 3Place in large bowl and refrigerate for at least 2 hours or until set.

Step 4Whip up cream and place on top of pavlova. Decorate with sliced strawberries or kiwifruit.
Recipe Notes
You can add sugar to the whipped cream if desired, I don't as I find this dessert is sweet enough. I sometimes replace the strawberries and kiwifruit with sliced bananas. Any fresh fruit is fine, my sister puts fresh berries or grated chocolate on hers. This is best eaten the day its made.
