Moroccan style chicken with almonds, kids loved this.
Ingredients
- 3 tbs olive oil
- 1 1/2 tsp ground cumin
- 1 tsp paprika
- 1 tsp ground turmeric
- 1/4 tsp ground allspice
- 2 kg chicken lovely legs separated skin off
- 1 onion finely chopped large
- 4 garlic clove finely chopped
- 1 cup dried apricots
- 1/2 cup coriander chopped
- 1/2 cup slivered almonds
- 1 1/2 cup water
Method

Step 1Split chicken into drumsticks and thighs.

Step 2In a large frying pan, heat the oil over medium heat. Add the cumin, paprika, turmeric and allspice, and cook for 1 minute.

Step 3Working in batches, add chicken and cook for 4 minutes per side or until golden brown. As chicken browns transfer to a large heavy bottomed casserole dish.

Step 4Add onion and garlic to frying pan and cook for 10 minutes or until golden brown and tender. Transfer to the casserole dish.

Step 5Add water to frying pan and bring to boil. Add apricots and ¼ cup coriander to the frying pan and return to the boil.

Step 6Cover and cook for 30 minutes or until the chicken is tender. Stir in the almonds and remaining coriander.

Step 7Pour apricot mixture into casserole with chicken, bring to the boil, then reduce to a simmer.
Recipe Notes
This is nice served on top of couscous. It can be served without almonds. This recipe is also good for people with diabetes.
