Ingredients

  • 3 tbs olive oil
  • 1 1/2 tsp ground cumin
  • 1 tsp paprika
  • 1 tsp ground turmeric
  • 1/4 tsp ground allspice
  • 2 kg chicken lovely legs separated skin off
  • 1 onion finely chopped large
  • 4 garlic clove finely chopped
  • 1 cup dried apricots
  • 1/2 cup coriander chopped
  • 1/2 cup slivered almonds
  • 1 1/2 cup water

Method

  • Step 1
    Split chicken into drumsticks and thighs.
  • Step 2
    In a large frying pan, heat the oil over medium heat. Add the cumin, paprika, turmeric and allspice, and cook for 1 minute.
  • Step 3
    Working in batches, add chicken and cook for 4 minutes per side or until golden brown. As chicken browns transfer to a large heavy bottomed casserole dish.
  • Step 4
    Add onion and garlic to frying pan and cook for 10 minutes or until golden brown and tender. Transfer to the casserole dish.
  • Step 5
    Add water to frying pan and bring to boil. Add apricots and ¼ cup coriander to the frying pan and return to the boil.
  • Step 6
    Cover and cook for 30 minutes or until the chicken is tender. Stir in the almonds and remaining coriander.
  • Step 7
    Pour apricot mixture into casserole with chicken, bring to the boil, then reduce to a simmer.
Recipe Notes
This is nice served on top of couscous. It can be served without almonds. This recipe is also good for people with diabetes.
