A quick and easy muffin that is moist and delicious. The added bonus is it's reasonably healthy for you too.
Ingredients
- 1 cup self-raising flour
- 1 cup wholemeal self-raising flour
- 1/2 cup brown sugar
- 1 egg lightly beaten
- 1 cup buttermilk
- 1/3 cup rice bran oil
- 1 cup frozen mixed berries
- 1/2 cup white chocolate chips
Method

Step 1Preheat oven to 180C and grease a muffin pan.

Step 2Sift flours and brown sugar into a mixing bowl and make a well.

Step 3Mix egg, buttermilk and oil together then add to dry ingredients and stir until just combined.

Step 4Gently fold through frozen mixed berries and white choc chips.

Step 5Spoon mixture into prepared muffin pans.

Step 6Bake for approximately 25 minutes or until golden and muffin springs back when touched.

- 1 12-hole muffin pan
Recipe Notes
I leave the berries in the freezer until I am ready to mix them into the mixture to minimise the berry colour running through the mixture.
Any fresh berries could easily be substituted for frozen if available.
We don't like our muffins overly sweet so the sugar content could be increased to ¾ cup if that is your preference.
