A fast method that makes a tasty relish.
Ingredients
- 1 tbs cornflour
- 1 red capsicum cored diced seeds removed
- 1 green capsicum cored cored diced seeds removed
- 375 g corn cob kernels
- 1 onion finely chopped large
- 1/3 cup sugar
- 1 cup white wine vinegar
- 1 tbs mustard
- 2 tsp ground turmeric
- 1 tsp ground pepper
- 1 garlic clove crushed
- 1 tbs vegetable oil
Method

Step 1Blend cornflour with a little of the vinegar and set aside.

Step 2Heat oil in a large bowl for 1 minute.

Step 3Add capsicum, corn, onion, garlic, sugar, turmeric, mustard and vinegar. Stir to mix.

Step 4Cook for 4 minutes.

Step 5Stir then add pepper.

Step 6Stir in blended cornflour and heat until boiling, stirring occasionally.

Step 7Bottle and seal.

Recipe Notes
You can adjust the cooking power (not the time) depending on the wattage of your microwave: 500-600 watts - 100% (high), 650-750W - Medium high (75%), 800-1000W - Medium (50%). You can also cook this the traditional way on the stove top.
