Ingredients

  • 1 tbs cornflour
  • 1 red capsicum cored diced seeds removed
  • 1 green capsicum cored cored diced seeds removed
  • 375 g corn cob kernels
  • 1 onion finely chopped large
  • 1/3 cup sugar
  • 1 cup white wine vinegar
  • 1 tbs mustard
  • 2 tsp ground turmeric
  • 1 tsp ground pepper
  • 1 garlic clove crushed
  • 1 tbs vegetable oil

Method

  • Step 1
    Blend cornflour with a little of the vinegar and set aside.
  • Step 2
    Heat oil in a large bowl for 1 minute.
  • Step 3
    Add capsicum, corn, onion, garlic, sugar, turmeric, mustard and vinegar. Stir to mix.
  • Step 4
    Cook for 4 minutes.
  • Step 5
    Stir then add pepper.
  • Step 6
    Stir in blended cornflour and heat until boiling, stirring occasionally.
  • Step 7
    Bottle and seal.

  • 1 blender
Recipe Notes
You can adjust the cooking power (not the time) depending on the wattage of your microwave: 500-600 watts - 100% (high), 650-750W - Medium high (75%), 800-1000W - Medium (50%). You can also cook this the traditional way on the stove top.
