A healthier alternative to potato bake with cheese sauce.
Ingredients
- 1 tbs olive oil
- 1 leek sliced
- 1 kg potato thinly sliced
- 2 tsp fresh thyme
- 1/2 cup chicken stock (liquid)
- 1/2 cup parmesan cheese grated
Method

Step 1Place olive oil and leek in microwave-safe bowl, cook on High (100%) for 4 minutes.

Step 2Spread one third of sliced potatoes in a 1.25 litre heatproof and microwave-safe dish.

Step 3Top with half the leek slices. Sprinkle with herbs.

Step 4Repeat layers, finishing with potato.

Step 5Pour over stock, cover, cook on High (100%) for 13 minutes.

Step 6Sprinkle with parmesan, season with salt and pepper.

Step 7Place under a pre-heated grill until golden brown.
Recipe Notes
Use any herbs you prefer, substitute spring onions for leek, if liked.
