A healthier alternative to potato bake with cheese sauce.

Ingredients

  • 1 tbs olive oil
  • 1 leek sliced
  • 1 kg potato thinly sliced
  • 2 tsp fresh thyme
  • 1/2 cup chicken stock (liquid)
  • 1/2 cup parmesan cheese grated

Method

  • Step 1
    Place olive oil and leek in microwave-safe bowl, cook on High (100%) for 4 minutes.
  • Step 2
    Spread one third of sliced potatoes in a 1.25 litre heatproof and microwave-safe dish.
  • Step 3
    Top with half the leek slices. Sprinkle with herbs.
  • Step 4
    Repeat layers, finishing with potato.
  • Step 5
    Pour over stock, cover, cook on High (100%) for 13 minutes.
  • Step 6
    Sprinkle with parmesan, season with salt and pepper.
  • Step 7
    Place under a pre-heated grill until golden brown.
Recipe Notes

Use any herbs you prefer, substitute spring onions for leek, if liked.
