Ingredients

  • 100 g butter brought to room temperature
  • 150 g self-raising flour
  • 100 g soft brown sugar
  • 100 g peanuts roughly chopped
  • 4 tsp instant coffee powder
  • 2 tsp hot water
  • 1/4 tsp ground cinnamon

Method

  • Step 1
    Pre-heat oven to 180C.
  • Step 2
    Cream butter and sugar. Add chopped peanuts and dissolved coffee, mix well.
  • Step 3
    Sift flour and cinnamon, add to butter mixture and beat well.
  • Step 4
    Roll dough into small balls with hands, arrange on baking trays lined with baking paper, press down with fork.
  • Step 5
    Bake in oven for 10-15 minutes or until biscuits begin to firm up.
  • Step 6
    Cool on wire rack.

  • 1 baking paper
  • 1 wire rack
Recipe Notes
Use salted peanuts and dissolve instant coffee in hot water.
