Keen to give your mashed potatoes a little update? Add an egg yolk to make them extra rich and fluffy, then serve with a sprinkling of cheese and spring onion.
Ingredients
- 4 potato large peeled washed
- 1 shallots finely chopped
- 1/4 cup milk cold
- 1 egg yolks
- 1 tbs butter
- 1 tbs cheese grated *to serve
- 1 tbs shallots finely chopped *to serve
Method

Step 1Bring cold water to the boil in a medium to large saucepan.

Step 2Cube potatoes and place into water. Bring to the boil until soft.

Step 3When potatoes are ready to mash, drain and add butter, salt and pepper and egg yolk.

Step 4Mash, adding extra milk if needed. Mix though spring onion.

Step 5Serve hot and sprinkle with grated cheese and extra spring onion to garnish.

Are mashed potatoes healthy?
Mashed potato can be healthy, depending on what you add to them. Butter, cheese, egg yolks and milk will increase the fat- and calorie-content of your mash, so leave them out or keep them to a minimum if you prefer.
