Ingredients

  • 2 mango peeled sliced
  • 1 cup vanilla custard
  • 300 ml thickened cream
  • 2 tbs icing sugar

Method

  • Step 1
    In a bowl, combine the mango slices and custard together. Reserve a few slices of the mango for decoration.
  • Step 2
    In another bowl, mix the cream and icing sugar with an electric mixer until soft peaks form. Spoon half the cream over the mango-custard mix, and swirl it lightly into the mango custard with a knife so it has a 'swirly' look. Don't blend it together.
  • Step 3
    Decorate with extra cream on top plus the reserved mango.
Recipe Notes
I spoon the cream over the custard, and use 2 knives to lightly blend it in. You can do this in individual bowls for a great effect, or one large bowl. If there are some in the family that don't like cream, the individual bowl is handy, as it is just as tasty mixing the mango and custard without the cream. You can always add more mango if you love the taste of mango.
